Recipe: Santa Fe Chicken Salad Wrap



Hey guys! It's July and It's not letting me type with capitals for some reason... ok sorry about this. so sea and i will try to post more regularly now that we have our laptops back and that summer is over. anyway, here's a cool recipe for a picnic or a school lunch or whatever!                                           What you need

4
cups  torn romaine lettuce
1
pkg.   (6 oz.) OSCAR MAYER Deli Fresh Southwestern Seasoned or Grilled Chicken Breast
1
large  tomato, chopped
1
can   (11 oz.) corn, drained
1/2
cup  KRAFT Mexican Style Finely Shredded Four Cheese
1/4
cup  KRAFT Classic Ranch Dressing
1/4
cup  TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
8
 flour tortillas (6 inch)

Make it

Santa Fe Chicken Salad Wrap recipe
COMBINE first 4 ingredients in large bowl; sprinkle with cheese.
MIX dressing and salsa. Add to lettuce mixture; toss to coat.
SPOON onto tortillas; roll up.

Bad Seana!




Um..yeah. Kinda forgot to post. o_o Sad, isn't it? Well, now I am posting. Huzzah.

You will need:


Step one:

Take the back off of your photo frame (carefully!) and place your wrapping paper/material into the photo frame. Either cut around the edges of the material so that it fits into the photo frame, or draw around it first. I found drawing around it first was easier, though this means you may have to trim the edges a little, to get a good fit.

Step two:

Once your material fits nicely into the photo frame, take it out, and either using your magazine/newspaper, or the left over material/paper, begin drawing and cutting out your letters. I used the leftover paper, as it was a brown colour on the opposite side, and it was fairly thick.

Step three:

Once you have cut out all of your letters, begin arranging them on your material/paper. When your sure that you like your arrangement, stick them down. I used a glue stick to save time, but, if your paper/material is fairly thick, PVA would probably work just as well.

Step four:

Add any extra features or embellishements to your inspiration poster if you wish, and place it in the photo frame, making sure you have no ripples when you place on the back. Secure, and display.

Step five:

Yay you! You've made your first inspiration poster. Let it take pride of place on your wall, shelf, or even door, and if you don't have a photo frame handy, simply hang or stick it somewhere instead.

Wizard of Oz Cake

I've always loved this movie, and when I saw this picture floating around the internet, I snagged it with my bare hands (a tough feat to accomplish, I assure you) and slapped it into a post. Sadly, it didn't come with instructions on how to create this masterpiece, but perhaps you crafty people out there can figure out how. [:


The only problem I have is that Toto looks rather like a deranged wombat instead of a dog, and Dorothy doesn't have red enough hair. Other than that (and the fact that the tornado looks somewhat like a bird's nest) it looks lovely, don't you think?

Lemon Ice Cream



LEMON ICE CREAM
1-2 T. freshly grated lemon zest
½ c. fresh lemon juice
1 c. sugar
3 large eggs
2 c. half & half
1 tsp. vanilla
In a saucepan, whisk together the zest, lemon juice, sugar and eggs.  Whisk in 1 c. of half & half plus the vanilla.  Cook over moderately high heat, stirring constantly, until the mixture just comes to a simmer.
Strain mixture through a fine sieve into a bowl, cover with plastic wrap, and chill thoroughly (several hours to overnight).  Whisk in remaining 1 c. half & half and freeze in an ice cream freezer.
If you'd like, go ahead and stick some blueberries on top for extra yum!

Heather's Coconut Cream Pie

This recipe is one I found on Heather Vogel Frederick's website and it sounded yummy. Here it is!


Coconut Cream Pie
Heather’s Cafe — Cannon Beach, Oregon
1 c. heavy cream
3 c. milk (don’t use less than 2%)
1-1/4 c. sugar
6 egg yolks
4 T. cornstarch
Pinch of salt
1 T. vanilla
1 T. butter
3-4 cups coconut
Baked pie crust
Whipped cream
In a bowl, mix 1/2 c. milk, salt, egg yolks, and cornstarch.
Bring remaining cream, milk, and sugar to a gentle boil.  Pour a bit slowly into the egg mixture, stir, then slowly pour egg mixture back into the heated milk (the point here is to avoid scrambled eggs).  Return to medium low heat and stir until thickened and boiling (small bubbles, not full rolling boil).  Boil for about four minutes.
Remove from heat; stir in butter and vanilla.  Add 3 cups coconut (more or less, depending on your preference).  Cool.  Pour into baked and cooled pie crust.  Top with whipped cream and toasted coconut flakes.
Heather said that she posted this recipe for National Pie Day which I totally missed out on. Drat. >.<
